Finca Almirall, in Castellví de la Marca, is Privat’s vineyard dedicated to organic cavas. Covering 100 hectares, it combines vineyards over 40 years old, forests that promote biodiversity, and sustainable farming practices, without herbicides or pesticides.

Its calcareous and clay soils, Mediterranean climate, and altitude allow for balanced ripening of the grapes, contributing unique aromas and flavors.

The estate reflects Privat’s philosophy: combining organic farming, innovation, and respect for the environment to produce cavas of the highest quality and sustainability.

Finca Almirall, en Castellví de la Marca, es el viñedo de Privat dedicado a cavas ecológicos. Con 100 hectáreas, combina viñedos de más de 40 años, bosques que fomentan la biodiversidad y prácticas agrícolas sostenibles, sin herbicidas ni pesticidas.

Sus suelos calcáreos y arcillosos, el clima mediterráneo y la altitud permiten una maduración equilibrada de las uvas, aportando aromas y sabores únicos.

HARVEST

The harvest at Finca Almirall takes place early to preserve acidity and freshness, essential in high-quality cavas. Much of it is mechanized, but a plot dedicated to premium wines maintains manual harvesting, combining artisanal tradition with efficiency and careful innovation.

The harvest is carried out at the beginning of the season to ensure grapes with high acidity and low alcohol content, essential for producing top-quality cavas. This careful process preserves the freshness and liveliness of the cava, reinforcing Finca Almirall’s identity as a producer that honors regional tradition while always keeping an eye on innovation.

To ensure quality and efficiency, most of the harvest is mechanized, except for a small plot dedicated to the highest-quality wines, which continues to be hand-harvested. Cultivated as bush vines, this vineyard receives personalized attention, reflecting the meticulous, artisanal work of the vine-growers to produce exceptional fruit.

VARIETIES

Finca Almirall cultivates traditional cava varieties such as Xarel·lo, Macabeo, and Parellada, together with Pinot Noir and Chardonnay, all perfectly suited to the local environment.

 Xarel·lo: Native variety of the Penedès that produces structured wines with body and distinctive character.
 Macabeu (Viura): Produces light, smooth, and balanced wines, elegant and with great aging potential.
 Chardonnay: Stands out for its vibrant acidity and aromatic richness, with exotic notes that provide freshness and intensity.
 Parellada: Contributes fruity, smooth, balanced wines with refined and unmistakable freshness.
 Pinot Noir: Produces fruity and delicately aromatic wines, with low tannins and seductive bubbles.
